Lately I’ve been reading the book, “I Quit Sugar” by Sarah Wilson, which has literally changed my life. Quitting sugar has made me feel so good and I can tell that I have more energy than ever before. Of course, treating myself here and there is important, but cutting out sugar overall has been awesome. Something I’ve learned is that many items we eat have sugar in it, that we don’t even know about. Things like sauces, breads, and artificial sweeteners for example. Food is something I love, so finding healthy, sugar-free alternatives is a must.
This week I decided to make a bacon, egg, and cheese Fritatta! It’s light, healthy and full of protein and of course sugar-free. This dish takes about 20 minutes total to cook. Preheat the oven to 400?F and lightly grease the muffin pan with Coconut Oil.
Step 1: Use the Turkey bacon strip to line the edges around each muffin cup. Next, gently crack 1 egg into each bacon cup (if you want just egg whites, remove the yoke before adding the egg). Feel free to sprinkle herbs and cheese on top.
Step 2: Place the tray in the oven and bake for 15 minutes, until the eggs are set. Let sit for a minute and gently remove from the pan.
Step 3: Serve hot or warm. Complete your brunch by adding a ginger or kale juice!
